Summing it all up: If you know the Wahaca menu like the back of your hand, then get down to Shoreditch where you can be the first to try, and rate brand new concoctions from the Mexican chain, before they get rolled out nationwide, or send back to the drawing room.


The low-down

 If you’ve chomped your way through every item on the Wahaca menu a billion times, or close enough, then you’ll want to be getting yourself down to Tabernacle Street shortly when their new test kitchen opens.

That’s because there’ll be loads of new dishes for diehard fans to try, on a menu that'll change seasonally, while still retaining plenty of Wahaca's classic dishes for the less adventurous in your party. Similarly to Wagamama’s recently launched test kitchen, the new Wahaca will “act as an innovation platform to develop new ideas and recipes” - essentially a test platform - before rolling them out nationwide.

Some of the new first dishes on the menu, that you may very well end up seeing at a Wahaca near you include:

  • Blackened cauliflower tacos with cashew nut mole
  • Whole roast sea bream with al ajillo butter & kohlrabi slaw market board
  • Nixtamalized corn tortilla with non-GMO corn
  • Thyme & roasted sweet potato taquito

They’ll be flexing their creative muscles in the drinks department too, including Basil Mezcalitas and the slightly terrifying-sounding Jalapeño Margaritas, accompanied by over 20 tequilas and mezcals. You’ll be able to take it all in in a very colourfully decorated set up, bedecked in murals from Oaxacan artist Lelo.

And when you’re done, you can let the restaurant know what you *really* think without the horror of having to be honest face to face, thanks to a “digital bill tablet” where you can rate your dinner.
