Raising the steaks - talking to Huw Gott and Will Beckett, the people behind Hawksmoor

With a successful cook book under their belts, and a third City location added to their ever-expanding stable, the future's looking pretty bright for childhood friends-turned-restaurant-partners Huw Gott and Will Beckett. Jun Tanaka is famed from appearances on Satruday Kitchen and as Head Chef of Pearl restaurant in Holborn.  But it's the success of the Street Kitchen initiative with Mark Jankel that has recently gained them both further plaudits - serving well-sourced high-class cooking from their trailer. Brett Redman, the man behind new opening Elliot’s Cafe, Borough Market’s new unofficial market restaurant

Brett moved to London from Australia on a whim in 2005 and has been here ever since. He first opened a cafe Elliot’s on Bethnal Green Road where he met Rob Green, his business partner who he then opened the Pavilion cafe on Victoria Park in 2007. Their new restaurant on Stoney Street by Borough Market is called Elliot’s which he says ‘is an evolution of all our previous ideas’.
