East Sussex - 13 Flimwell Park, Hawkhurst Rd, Flimwell, Ticehurst TN5 7FJ

This is the third restaurant from chef Will Devlin who also runs Michelin-starred The Small Holding and The Curlew. The rural East Sussex spot will be open for breakfast and lunch with a menu featuring local cheeses and drinks while ingredients like mushrooms, wood sorrel and birch sap come from the woods here. The sustainability ethos extends to the power supply, building and even the car park.

Carter’s One Star Döner BarCarter’s One Star Döner Bar

Manchester - 11 Baring St, Manchester M1 2PY

Brad Carter of the Michelin-starred Carters of Moseley, has opened this new elevated kebab spot at Escape to Freight Island in Manchester. Inspired by Berlin's Gemüse Kebab the pides are from a Turkish bakery in town while toppings might feature Cornish Lamb, Tamworth Mortadella and Cotswold White Chicken. Brad’s signature potato smileys are on as a side dish.

Lichfield - 25 Bore Street, Lichfield City WS13 6NA

Good luck getting a table at this, the first solo restaurant by chef Tom Shepherd who made a name for himself at Michelin-starred Adam’s restaurant in Birmingham. The first-floor restaurant is set above his father’s jewellery shop in Lichfield. Expect a modern British menu with subtle influences from Japan and East Asia. Think dishes like Orkney scallop with dashi, celeriac and apple. There's also a roof terrace planned for early 2022.

Scottish financier turned chef Tom Tsappis is known to Londoners for his Greek fine dining supperclub Elia. Now he and his sommelier wife Matilda have opened this restaurant with rooms in the Cairngorm National Park. Enjoy a multi-course tasting menu in the open restaurant and at the chefs table with potential dishes including kombu cured mackerel with apple and horseradish; and Highland wagyu with green tea, onions and pickled pine.

What happens when you cross a restaurant company responsible for hits like Lina Stores and Kricket with a popular US hotel chain? Well, you get this revival of Oxford's best-known hotel The Randolph, bringing its food offering up to date with new bars and restaurants. Chris Emery is the chef in charge (he's ex-Jason Atherton) and his all-day menu looks to Oxfordshire, Wiltshire and Gloucestershire for inspiration and produce.

Marine North Berwick hotel is the site for this new restaurant from White Rabbit Projects. MasterChef: The Professionals semi-finalist Chris Niven who comes here via The Fairmont in St Andrews and The Scotsman is serving up Loch Fyne oysters and more on an all-day menu.

Head Chef Tom Powell comes here from The Walnut Tree in Abergavenny to join the team behind Nook and Dusty's Pizzeria. They've taken over an old warden's house in Sophia Gardens for this small plates and natural wines restaurant. Ethical, local and sustainable are the keywords here and there's a greenhouse and kitchen garden to help reduce food miles.

As part of the huge Johnnie Walker experience opening on Princes Street, you'll find this rooftop bar and restaurant with great views across Edinburgh. It's an all-day venue with locally sourced produce and the option to have whisky paired dinners.

Part of the new Cambridge Graduate Hotel, this sees ex-Perilla chef Adam Wood in charge, with what's called a "flame-focused" menu and also has a focus on East Anglian produce. There's also a bar with a terrace that looks out onto the River Cam.

Heading up the pub here is Matt Larcombe who's the former head chef of Heston's gastropub The Crown at Bray. He and partner Simon King have brought together a talented team to serve up what they dub "elevated British classics". Look out for a particularly good wine list.

Celentano's  Celentano's

Glasgow - 28–32 Cathedral Square, Glasgow, G4 0XA

Celentano's is the first solo restaurant from Dean Parker and his wife Anna. Parker used to be head chef at Darby's in London before heading to Glasgow to open this Italian-inspired restaurant. Herbs are grown in their own garden to accompany dishes like smoked beetroot with sunflower miso and dukkah and there are biodynamic wines on tap to pair with the dishes.

Fresh from hosting the G7 summit, Carbis Bay hotel now has a brand new restaurant from Adam Handling. Given the seafront location, amazing sea views are a given, while menus focus on local, seasonal produce tied together with a passion for no-waste cooking.

Chef Kevin Tickle's last position was at Forest Side where he steered the restaurant to a Michelin star. Now he and his wife have taken on a 17th-century coaching inn in the heart of Cumbria. There's a 28 cover fine dining restaurant open now, with guest rooms coming later.

Richard Falk arrives in Lewes with The Dairy and The Ledbury in his impressive CV. He's intending to hit up amazing local producers in East Sussex for the menu for this neighbourhood restaurant. Weekends will see them serving classic brunches with a Middle Eastern influence, while weekday lunches sound enticing with treats like Trenchmore flank, salsa verde and smoked bone marrow on toasted milk bread on offer.

This is chef Harriet Mansell's second operation in Lyme Regis following the opening of Robin Wylde last year. Lilac is a low intervention wine bar, taproom and neighbourhood spot serving small plates with plenty of wild and foraged ingredients on offer.

Former Portland chef Merlin Labron-Johnson had a hit on his hands when he moved to rural Somerset to open Osip at Number One Bruton. Now he's expanded his base with the opening of The Old Pharmacy - a wine bar and shop. While you can swing by and pick up their own homemade cider to take away, you'll want to stay and eat with much of the produce coming from Merlin's own smallholding.

Sargasso  Sargasso

Margate - Margate Harbour Arm, Stone Pier, Margate CT9 1AP

Margate locals were relieved to hear that Sargasso hadn't closed for good and the news got better when they realised it had been taken on by Ed Wilson and Josie Stead of Brawn. This Harbour Arm space is all about coastal cooking with a team of East London expats running the place. Outside tables are much sought after, but they're up for grabs with walk-ins only.

The team behind Manchester's super popular pizzeria Ramona have turned to fire for their next opening. Here, it's all about rotisserie chicken cooking over an open flame. To go with that, there's pita with various toppings and cocktails like the Bloody Maria and Frozen Pisco Colada.

Right now the restaurant at Water Lane walled garden in Kent is an alfresco affair while the Victorian vinery is restored. The garden's new owners Nick Selby and Ian James run Melrose & Morgan in London and have brought in chef Jed Wrobel to cook food that's mainly supplied by their own kitchen garden. The wine list is good too, from Keeling & Co, the wine merchant arm of Noble Rot.

Joro's owners Luke French and Stacey Sherwood-French are the creative force behind Liverpool's new izakaya. You'll find it inside the GPO Food Hall in the Met Quarter, serving dishes like Cornish stone bass sashimi and Sicilian red shrimp 'unrolled'.

Norfolk - Sculthorpe Mill, Lynn Road, Fakenham, NR21 9QG

The Peyton clan are a talented bunch, in addition to Great British Menu judge Oliver, sisters Siobhan and Caitriona Peyton are now the owners of this North Norfolk riverside pub. It's an all-day affair here with head chef Elliot Ketley (ex-Soho House) serving up dishes like devilled eggs with pickled jalapenos and a spaghetti of girolles with summer leeks, tarragon, toasted hazelnut. Look out for an excellent wine list courtesy of Zeren Wilson.

Enjoy whatever the boats have brought in - whether that's whole spider crab or grilled megrim - and there's the odd meaty dish too like a Mangalitsa chop with yellow beans.

Restaurateur Razak Helalat (Coal Shed, Salt Room) is behind this new wood-fired restaurant on Brighton's Middle Street and he's brought over Salt Room's head chef Peter Dantanus to run the kitchen. Part restaurant, part bar you'll find skillet baked potatoes, BBQ chicken and flamed sea bream on the menu. Oh, and the music list's curated by Brighton's most famous resident Fat Boy Slim.

This saw chef Graeme Cheevers, formerly chef at Isle of Eriksa where he won a Michelin star. It has a weekly changing menu of Modern European cuisine with the tasting menu the main draw. Expect dishes like Spiced Canelé with whipped liver and preserved Lemon or Roasted Goosnargh duck with Medjool dates, beetroot, endive and kampot pepper sauce.

MasterChef The Professionals finalist Jono Hawthorne has finally got his own restaurant, taking over Vice and Virtue in Leeds. For viewers who watched his path to the finals, you'll be glad to know dishes like the toasted hay custard with wood ants will be on the tasting menu here.

Right on Exmouth beach, this is chef Michael Caines' new casual bar and restaurant, complete with a retractable glass terrace. Foodwise it's all Devon moules mariniere and fish and chips in local ale batter, plus there's a casual bar menu on offer along with Devon beers and ciders.

This new dinner-only restaurant in the grounds of Lainston House hotel sees Executive Chef Phil Yeomans take inspiration from his now-mature kitchen gardens. Produce from there - very low food miles - is given the woodfire and BBQ treatment, so you might find Woodfired scorched garden raspberry ‘Baked Alaska on the dessert menu or Cedar plank seared Chalk Stream trout for a main.

Double Red Duke is the latest opening from the creative team behind the Country Creatures country inn brand. Here, they've brought in Richard Turner (Hawksmoor and Meatopia) to work alongside head chef Richard Sandiford for a menu with large cuts of meat and whole fish dishes. There's also a gorgeous garden for cocktails alfresco.

It's a slightly more casual affair than Fordwich, and there's a big focus on seasonal, local produce and plenty from their Jospor grill.

This new restaurant at the Links House at Royal Dornoch plunders Scotland's larder for its menu. Hot new Plymouth restaurant Platos has opened in the city's oldest building - the medieval Prysten House. Taking inspiration from owners Benjamin and Frankie Palmer frequent trips to Greece, you'll find Med-inspired dishes using the amazing seafood they find on their doorstep. Think wine bar meets small plates joint with DJs at the weekend. They had us at lobster croquetas with caviar.

Super popular Norwich vegan spot The Tipsy Vegan is expanding, opening by the river in Cambridge. Owners Michelle and Cheryl serve a range of small plate world inspired dishes vegan dishes including Venezuelan Jackfruit Arepas. The Cambridge restaurant sees ex-Farmacy chef Fatih Guven in the kitchen.

The owner of Brixton's Salon and Levan, Nicholas Balfe, is heading to the countryside to open this coworking space with a restaurant and bar. Taking over the old bank there's an outdoor grill and dining terrace, as well as a kitchen garden with a wine bar in the old vault. Sample dishes sound great including a Somerset ex-dairy tartare with pickled mushrooms and cured egg yolk.

It's all change for Scottish chef Roberta Hall-McCarron. She's moved her much-loved Little Chartroom down the road, and in its place will be Eleanore. That's a restaurant and wine bar where you can perch at the counter and try small plates like BBQ Pork Neck with Chicory and Quince or oysters with fermented cucumber, sweet pickled apple and horseradish oil.

Top chef Nigel Haworth is behind this Ribble Valley restaurant with a farm to fork ethos celebrating Lancashire produce. The pub is getting a full design overhaul and new additions include a fully heated outside feasting table.

It's not often you find the words baker, deli and pottery grouped together, but this new Stockport opening isn't your run of the mill place. It sees Where The Light Gets In chef Sam Buckley joining forces with potter Joe Hartley and baker Rosie Wilkes for an all-day space that's open for breakfast pastries, takeaway sarnies and pizza and natural wine in the evenings at weekends.

Who wouldn't want to applaud a venture which saved a local pub from being redeveloped? That's what the Orwells team have done here. They're going to be cooking food from their own allotment but promise that "this will be a family and dog-friendly, all day eating and drinking place".

Birmingham - 24th Floor, 103 Colmore Row

This is from D&D, who are opening a restaurant in Birmingham for the first time (the exact name is still TBC). Right at the top of the building, it'll be a double-height room, so you can expect some pretty spectacular views. They'll also have a restaurant and bar on the ground floor if heights aren't your thing.
