If your game was really good during lockdown you might have been lucky enough to try a delivery from Goila Butter Chicken. Mumbai-based celebrity chef Saransh Goila has - and these are their words - "single-handedly turned butter chicken into a religion in India". His secret? Apparently it's hiking up the tomato to dairy ratio as well as plenty of smoke. The chicken in question comes from Yorkshire's Herb Fed farm and he uses organic British cream and French butter in the recipe too.
Saransh, who has various TV shows in India and has been a guest chef of MasterChef Australia first brought his version of butter chicken over to the UK for a Carousel popup just before the pandemic hit. Now, having also built a business for his meal kits, he's getting ready to be the first person to take over Carousel's restaurant incubator space at their new Charlotte Street home.
The 10-seat counter dining space has its own street frontage and entrance, but is linked to the rest of Carousel's building - making it a distinct space for restaurants to move from pop up to permanent.
On the menu they're promising, among other delights:
- Mini Papadams dusted with a Masala Spice Blend
- Skin on fries with GBC's butter gravy
- Chicken/cauliflower tikka pakora bites
- Goila Butter chicken or paneer with rice
- A chicken tikka burger with butter gravy in a cumin brioche bun
