The Ledbury was one of the first casualties of the first lockdown back in 2020, with Brett Graham making a somewhat abrupt decision not to reopen. Ever since, however, there have been rumours of its reopening and now it's actually going to happen. 

Back in the summer of 2021, Eater was the first to report that Graham was planning to reopen the restaurant with a whole new look and more of a relaxed vibe. 

Then we heard, via the Telegraph, that the restaurant's revamp was in full swing with the entire restaurant being redesigned and rebuilt and a whole new kitchen team (and a new head chef) coming in to take over. 

Now we've had word from the horse's mouth, as Brett has finally spoken, to trade title Big Hospitality, about his plans. In an interview with them, he says The Ledbury will open to paying customers from February, starting with an eight-course tasting menu in the evenings costing £180 (matching wines will be an additional £120). And while several of the original staff will be back in place, Brett's also brought in Tom Spenceley as head chef from Kitchen Table. 

As for the design, London-based design studio These White Walls have been busy redoing the interiors - they were also responsible for the look of Hide. The design involves cutting down the seats from 55 to 45, so expect it to be even harder to get a table. 

We haven't seen much about the menu yet, bar this dish of Cauliflower royale, bonito and cauliflower cream and Exmoor Caviar, but we have seen early pictures of a rather fine looking mushroom fridge.
