In a nutshell: Behind the scenes in London Fields
Summing it all up: Andy Beynon, former development chef for Jason Atherton, is opening his own restaurant in London Fields which is all centred around the workings of the kitchen.
After working for Jason Atherton as his development chef, Andy Beynon is getting ready to go it alone with his first solo restaurant, Behind.
The chef may have been working behind the scenes recently, but he's got an impressive CV featuring work with Claude Bosi at Hibiscus, Phil Howard at The Square and Michael Wignall at The Latymer.
His solo restaurant in London Fields (taking over the space left by Fold) will be an entirely chef's table experience (albeit one with all the necessary social distancing rules in place) and the 18 seats in the restaurant promise to overlook the entire kitchen, not just the pass at the front. We'll try to get some pictures of the space that will help to illustrate that.
As for food, it will serve up an eight-course tasting menu with sustainable seafood as its focus. Here's what's promised for the starting menu:
- Cornish blue lobster, English muffin and yuzu
- Native oyster, cucumber and wasabi taco
- Hen of the Woods mushroom tea and French toast
- Secret Smokehouse chowder and Copper Maran yolk
- Hake, cauliflower, emerald ice kale and roasted squid broth
- 72% chocolate and sweet milk
In addition to the main event at Behind, there's also a wine bar and bottle shop next door, where you can have a drink pre or post-dinner. Here's what Andy has to say about the restaurant:
I’ve watched the East London food scene develop over the past few years, and I’m excited to now be able to bring my classical training to the neighbourhood I live in. For me, the service is as much a part of the meal as the food itself, which is why the entire menu will be served by us, the chefs. This is the chance for our diners to get a look "behind" the scenes of a busy kitchen.
